Köfte is usually made of ground meat. It can also be made without any meat at all however, as in the case of lentil or potato köfte.[1] The word Kufteh is Persian for "mashed". In old times since people did not have meat grinders they minced meat to very small pieces and then mashed them in rather large mortars.

Kofte is a significant staple food in Turkish culinary tourism.[3] Turkey is a country rich in culture and food thus creating a solid market for culinary tourists. Kofte kebabs, along with other meat dishes such as "doner kebab and "ciger sarma" create a theme of meat-based cuisine.[3] These dishes are typically served with a cabbage salad or a soup, and collectively create a diverse and culturally-rich culinary experience for tourists.[3]
